The Underground Bakery offers a wide variety of sweets alongside Organic, Fair-Trade Indigo Coffees. You’ll find Natural-starter breads baked daily, and a robust menu of breakfast, lunch and vegan offerings. You might be surprised to hear that nearly everything is made from scratch, in-store. That means that you can be sure that everything was made fresh with the satisfied customer in mind. Priding itself on its friendly staff and variety of foods that can best be described as quick, unusual, imaginative and satisfying, you are likely to find something that makes you happy there.
In early 2009, Laurie DeCost and Ian Sullivan bought the downstairs bakery at 780 Main Street in Dennis Village. Laurie was the Pastry Chef and Head Baker when it opened to the public as a differently-named retail bakery and coffee shop in early 2001. She remained until 2005, developing a large number of the products still sold there today. From 2005 until 2009, Laurie served as Pastry Chef at a nearby fine-dining restaurant AND Manager of a different, nearby breakfast and lunch quick-service cafe. Concurrently, Ian worked as a Personal Chef and then Rounds Cook at a fine-dining restaurant in Yarmouth Port, working with unusual and high-quality ingredients, which he found to be of the greatest import. This is easily seen in the made-to-order breakfasts, lunches, and seasonal take-home meals now offered at the Underground. Laurie is on site nearly every day, trying new things, meeting new people, and upholding an old standard of high quality and complete service in a modern, friendly atmosphere.
